I have this same dilemma!

So far on shorter rides I just bring the water bottle and nothing else (under 12 miles)

But anything longer I bring the camelback with the tube and tools needed so I don't have to walk back to the jeep 20 mile away.

But I hate having a sweaty back from the pack!

I usually just carry my Camelbak MULE, with a couple spare tubes (because my buddy never fails to get a flat Whaaaaa? ), a few tools, and some Clif Bars!

I'm in Texas so I usually carry a camelback full of water, spare tire, cliff bars and extra C02 cartridge in case I get a flat.

It usually equals a sweaty back, but then again everything is really covered in sweat by the time I am done.

I have a Camelbak Cloudwalker, which is super light and minimalist, but it has plenty of space to store my helmet between rides.
Besides plenty of water I take a multi-tool, small first aid kit and a head-lamp because I usually don't get a chance to ride the local trails until 7:30pm and those woods get dark fast!
(I guess I don't need to mention that I throw my keys and phone in there)

I hired a tech to follow me around with a bunch of tools and fix my bike if it breaks. Also, I've got a porter to carry food and cook for me. I'm really hoping I can find someone soon who can do both though.

Seriously though, a Camelbak with water, granola bars, multi-tool with chain tool and spare tube and pump.

Camelbak Mule here too. SoCal riding is pretty mild on the coast, so tubes, Clif bar, tire levers, mini pump, and a multi tool and good to go. Also like to carry a small digital camera and cell just in case. P

For those of you with sweaty backs try the Deuter Race Race X packs. It keeps the pack off your back and ventilated with plenty of water.

I carry a tube, multitool w/chain tool, no glue patches, pump, GU gels, clif bars, SRAM quick links. I had to remove a twisted link while 15 miles out. Unless you are racing a race no need to go too light.
